Easy Stir Fry

This is a simple recipe I make frequently when I am working at home.  It's really good and comes together quickly.  Our squash vines have just started to really produce some vegetables, so I will be making this more in the coming weeks.

1 zucchini
1 squash
1 cup of brown rice
Olive oil
1 or 2 eggs

Put a frying pan on the stove and heat at medium heat.  Dice up zucchini and squash.

Put a little olive oil in the pan and place diced vegetables in.  Sprinkle with pepper to taste, I like a lot of pepper.  Cook vegetables until tender, I like mine a little brown.

While the vegetables are cooking, cook brown rice in microwave and prepare the eggs.

When vegetables are done cooking, push them to the sides of the pan.  Pour a little olive oil in the center and pour eggs on top.  Let the eggs set until fried and then cut them up with a wooden spoon and mix in with vegetables.  This takes patience to let them cook long enough.

Dump the rice in and mix together.  I also usually add a little soy sauce here as well.

Enjoy!  You can also add in other vegetables like carrots or mushrooms.  I have also put chicken in when making this for my husband.
